Cassava, Balinghoy or Kamoteng Kahoy is one of the riches sources of carbohydrates and a good source of minerals such as calcium, iron, manganese, phosphorus and potassium.

Calcium is necessary for strong bones and teeth.

Iron helps in the formation of two proteins (haemoglobin and myoglobin) which carry oxygen to your body tissues

Manganese helps in the formation of bones, connective tissue and sex hormones.  Prevents osteoporosis.  Reduces nervous irritability.  Needed for protein and fat metabolism.

Phosphorus promotes healthy gums and teeth.  Important for heart regularity.  Essential for normal kidney functions.  Lessen the pain of arthritis.  Provides energy and vigor.  Helps in the metabolism of fat and starches.

Potassium is necessary for synthesis of proteins and helps in the breakdown of carbohydrates.  Lowers blood pressure.  Helps to regulate water balance in the body.  Prevents heart attack.  Protects against stroke.  Important for healthy nervous system.  Helps in proper muscle contraction.

These minerals are necessary for proper development, growth and function of our body’s tissues.

Cassava is also a good source of saponin that help lower unhealthy cholesterol levels in our bloodstream.  The antioxidant effects of saponin found in Cassava help protects our cells from damage by free radicals.  If you are suffering from diabetes, eating fiber-rich cassava may help lower your blood sugar levels because fiber slows the absorption of sugar into the bloodstream.

In food, cassava has numerous uses which include native pastries like bibingka, suman, sago and many more.  Cassava flour can substitute for wheat flour in baked products, and it is utilized as thickener for soups, baby food, sauces and gravies.

Planting cassava is easy; the crop grows well on poor soils.  Stalk cuttings are planted in slanting position when the soil is dry and in vertical position in wet soil.

Let’s grow cassava in our backyard so we can cook and eat what’s fresh for the day while watching
our favourite movies.
